Pumpkin Cookies


Fall is in the air! And even though you may still be enduring some lingering summer heat, there is something magical about the smell of pumpkin, cinnamon and butter to help us get into the festive Autumn spirit!

This is one of my favorite Fall cookie recipes that my mom always made for my brothers and me every year as the leaves turned beautiful colors in Ohio and we packed every weekend with football games, hayrides and apple cider. I hope you enjoy this family recipe as much as we did!

Ingredients:

¾ c. butter (softened at room temperature)

¾ c. sugar

2 eggs

1 c. Libby's canned pumpkin pie filling (cooked)

1 tsp. vanilla

2 c. flour

½ tsp. baking soda

½ tsp. baking powder

¼ tsp. salt

½ tsp. cinnamon (ground)

½ tsp. cloves (ground)

½ c. raisins

½ c. chopped walnuts

Directions:

Cream butter and sugar; beat in eggs. Add pumpkin and vanilla. Stir in dry ingredients, raisins, and walnuts.

Drop on cookie sheet and bake at 350 degrees for 12 minutes.

Double every ingredient for a larger batch of cookies. Feel free to add or subtract any extra ingredients you want, like exchanging chocolate chips for raisins or taking out the nuts. It ALL tastes good!
