Holiday Seafood Medley
My husband is the humble, but magnificent chef of the family and this is one of the unique seafood recipes that he likes to use as a complimentary main course in addition to the turkey.

Ingredients:
1/2 pound shelled scallops
1/2 pound de-veined and shelled small shrimp
1/2 pound lobster tails
1/2 pound diced calamari
1 cup diced mushrooms
1 cup diced leeks
1 cup diced green onion
5 garlic cloves finely diced
1/2 stick of melted butter
1 cup cream or whole milk
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon cracked pepper
1/4 teaspoon minced parsley
Directions:
Preheat oven to 350F. Bring scallops, shrimp, lobster tails and diced calamari to room temperature. (Do not cook frozen or they will become mushy.)
Lightly sear scallops, shrimp, lobster tails, calamari and mushrooms in frying pan with a tablespoon of butter. (Don't overcook.) Remove lobster tail shell after it is cooked.
Pour cooked ingredients into casserole dish. Add green onion, garlic, salt and pepper. Pour water, cream and the rest of the butter into the casserole dish. Mix gently so all ingredients are moist with the butter and water. Sprinkle lightly with minced parsley.
Cover with tinfoil and bake at 350F for 10 minutes. Take out and enjoy over rice or by itself.
