Apple Cake & Apple Butter

Apples are my favorite fruit and when I combine my favorite fruit with my favorite month (September) everything seems to taste better and make me smile!

Here are two of my favorite apple recipes that I'm sure will be a great addition to your Festive Fall Favorites!

Apple Butter

Ingredients:

1/2 cup granulated sugar

4 cups applesauce (regular/strained)

1/2 tsp cinnamon

Directions:

Cook 1/2 cup sugar in a large skillet until deep amber. Add 4 cups applesauce and 1/2 teaspoon cinnamon; cook, stirring occasionally, until reduced by half, about 30 minutes.

Serve warm or chilled on toast, biscuits or substitute for jam to make a festive peanut butter and apple butter sandwich!

Apple Cake

Ingredients:

1 1/4 cups all-purpose flour

3/4 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp cinnamon

1/2 tsp nutmeg

1 medium-sized Granny Smith Apple

2 eggs

1/2 cup vegetable oil and milk

1 teaspoon vanilla

8 ounces cream cheese (one pack)

1/2 stick butter

1 cup confectioners' sugar

1 tsp lemon juice

1 tsp vanilla

Directions:

Whisk 1 1/4 cups flour, 3/4 cup sugar, 1 teaspoon baking powder and 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg.

Shred 1 Granny Smith apple and squeeze dry, then whisk with 2 eggs, 1/2 cup each vegetable oil and milk, and 1 teaspoon vanilla. Fold into the flour mixture.

Bake in a buttered 9-inch-round pan or bundt pan at 350 degrees for 20 minutes; take the cake out of the oven and let it cool at room temperature. (If you're doing a bundt pan, then let the cake sit upside down on a cooling rack. Wait for it to fully cool before taking it out of the pan or else it will fall apart.)

Cake Icing: Beat 8 ounces cream cheese, 1/2 stick butter, 1 cup confectioners’ sugar, 1 teaspoon each lemon juice and vanilla, and a pinch of salt; spread on the cake.
