Caramelized Sriracha Salmon

I have become a greater fan of Wild Alaskan Salmon as I've grown older and also since being married to my handsome Filipino husband, who has cooked new variations of traditional salmon dishes adding in more spice and new flavors that make my taste buds go wild!

Here's one of our favorite new recipes called CARAMELIZED SRIRACHA SALMON.

Ingredients:

Wild Alaskan Salmon Filet

1 cup brown sugar

1 clove finely minced garlic

1 teaspoon sea salt

1/2 stick butter

1/2 tablespoon Sriracha Sauce

3 cups mixed greens

1 cup finely chopped seaweed

1/2 olive oil

1/2 fresh squeezed lemon juice

Directions:

1. Filet the Wild Alaskan Salmon. Save skin for frying.

2. Lightly coat the salmon with brown sugar and sea salt before you cook it.

3. Sear the salmon in a hot pan with butter and add the Sriracha in the final 30 seconds before done. Cook at high temperature for 2 minutes. Let the salmon filet burn a little; don't move it too much in the pan.

4. Pan-fry the salmon skin until crispy.

5. Toss the mixed green salad with seaweed, olive oil and lemon juice.

6. Place mixed green salad on plate topped with the salmon filets and crispy salmon skin. (Squeeze extra lemon on the salmon for more zest.)

Bon appetit!
