Strawberry Sesame Walnut Salad
There is nothing more refreshing than a big salad in the summer heat. One of my favorite
salads is the Strawberry Walnut Salad! There are different variations to this recipe, but I think this is one of the most basic, healthy, refreshing salads of the season.
Strawberry Walnut Salad:
4 cups of mixed romaine leaves chopped
2 cups of ripe strawberries
1 cup of shelled walnuts
2 whole avocados
1 cup crumbled Trader Joe's Honey Goat Cheese
Salad Dressing:
1 cup sesame oil
1/2 cup balsamic vinegar
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/4 cup orange juice
Directions:
Rinse the romaine lettuce and finely chop. Rinse the strawberries, de-stem and cut into fourths. Place the shelled walnuts into a Ziploc bag and crush with a heavy tenderizer till broken into fine pieces. Slice the avocados into quarter-inch pieces. Mix all contents in a large mixing bowl. Crumble Trader Joe's Honey Goat Cheese into the large mixing bowl and lightly toss.
Mix salad dressing ingredients together in a separate small bowl and pour over vegetable mix when ready to serve.
