Mom's Famous Pumpkin Cookies!

As a child, there were several foods that branded my memory forever and one of those was my mom's pumpkin cookies. I have tried many other pumpkin cookies over the years (since pumpkin is one of my favorite flavors ;), but I have never found a pumpkin cookie like my mom's.

This pumpkin cookie will surprise you! It's not hard or sugary. In fact, it is more like pumpkin bread wrapped in the body of a cookie and it MELTS in your mouth.

This is the first time I'm publicly sharing this recipe, so I please ask you to try it and let me know your thoughts about this unique pumpkin cookie recipe! Enjoy!

Ingredients:

¾ c. butter

¾ c. sugar

2 eggs

1 c. Libby's Easy Pumpkin Pie Mix (can)

1 tsp. vanilla

2 c. flour

½ tsp. baking soda

½ tsp. baking powder

¼ tsp. salt

½ tsp. cinnamon

½ tsp. cloves

½ c. raisins

½ c. chopped walnuts

Directions:

1. Heat oven to 350 degrees.

2. Cream butter and sugar; beat in eggs.

3. Add pumpkin and vanilla to wet ingredients.

4. Stir in dry ingredients, raisins, and walnuts.

5. Drop on cookie sheet and bake at 350 degrees for 12

minutes.

***Double every ingredient for a larger batch of cookies.
