Trader Joe's Pumpkin Pancakes with Apple Butter

As the mother of a toddler and traveling on the road with my family at least 8 months of the year, I am constantly trying to find easy ways to provide healthy meals and snacks for my family. Breakfast is a meal that most people tend to ignore or skimp on because we are half-awake and trying to rush out the door to work, school or activities for the day. So, how do we have a healthy, filling breakfast without a lot of preparation?

A new household favorite for us this Fall has become the Trader Joe's Pumpkin Pancake mix! It comes from a box, but is quite delicious, healthy and easy to make. I like to make mini-pancakes that are "snack size" and add a small layer of organic honey apple butter between two small pancackes as a delightful Autumn favorite for my family to make in the morning or any time of the day when they need a quick snack.

The DIRECTIONS are on the back of the box and all you need are: the pumpkin mix, 2 tablespoons of melted butter, 3/4 cup milk, 1 egg

Once the pancackes are done, lay them each out on a flat plate or cutting board and gently apply a thin layer of organic apple butter and stack another mini-pancake on top of the applied apple butter. (Make sure to watch the bubble popping on the pancakes to turn them over in time so they're not burnt.)

For an extra kick, you can also put white raisins on the honey apple butter between the pancake layers. For an extra dessert, try adding mini chocolate chips on the apple butter between the pancake layers. Yum!!! :) For extra car snacks, pack a few dry mini-pancakes in a Ziploc bag for the road.

This is sure to be a fun Fall favorite that your family will not forget!
